The Field :

Philippe Naddef with learned the trade from vine grower and was caught of passion for the vine and the wine during the 3 years passed to the Field of Voguë with Chambolle Musigny.

It is in 1983 that it takes again on its account 2,5 hectares of Gevrey-Chambertin coming from the family field created originally by his grandfather.

Since the Field extended on the soils from Fixin and Marsannay and produces 12 names out of 6 hectares.

The Vineyard :

The vineyard of 6 hectares ( 0,70 ha of chardonnay, 5 ha 30 of pinot black) consists of 33 pieces. The vines are cut in simple Guyot or Cord of Royat according to the age and of the productivity of the stocks.

We practise the reasoned fight, aucuns weedkillers, nor artificial fertilisers are not used, all the vines are plowed several times in the year.

To optimize the maturity of the grapes, the vines are manually leafless and a green vintage is carried out if the outputs seem too important to us.

The vintage is entirely manual and, if necessary a sorting is made with the vine.

Wine making :

Red Wines :

The gathered grapes are transported in cases and éraflés to 100 %. the wine making begin with a cold maceration during 8 to 10 days and continues with an alcoholic fermentation of 1à at 15 days, without never exceeding the temperature of 33 °c.

White Wines :

The gathered grapes are transported in cases and directly in a hurry after a light pressing.

Musts obtained are selected and cleansed 36 hours afterwards.

Alcoholic fermentation is done at low temperature (maximum 18°c) on fine dregs, out of barrels for names village and tanks stainless thermo controlled for the regional ones.

Breeding :

It is in a cellar of the XVIIe century that all the wines of the Field are high out of barrels of oak, selected among the best French forests.

The percentage of new barrels varies from one name to another.

Only Marsannay Rosé remains out of tank stainless, until the setting in bottles.

Control of the vine, with the manual vintage until the setting in bottles, in a constant preoccupation with a quality, it is a whole work of patience and passion which is carried out.
